Paul Bentley, who was recently named Chef of the Year 2024 by the West Australia Good Food Guide, was known for offering a fresh take on traditional dishes at his Perth restaurant, Casa. Will Meyrick, a true globetrotter, brought a world of experience to the table. Born in Portimão, Portugal, raised in Scotland, and having lived in Italy and Peru before making Bali his home, Meyrick had been shaped by diverse culinary traditions. His time in Italy, in particular, had deeply influenced his understanding of authentic Italian cooking. For this collaboration, Meyrick channeled that Italian connection, offering dishes that highlighted the depth and richness of Italy’s cuisine through his unique lens.
Known for his flair in transforming humble, traditional fare into something extraordinary, Meyrick’s creations offered a refreshing and unique approach to Italy’s beloved flavors. As these two chefs with distinct yet complementary styles came together, this edition of NOM NOM Kitchen Takeover provided a rare opportunity to experience their combined creativity.
